What’s that noise?

Lately I’ve been spending a lot of time working on my book at home. Although sometimes I feel like a Mom because my dogs are so childlike. The other day I lost Peyroux, in our house! I called for her and even used the the silly voice as I yelled PAN-DDAA. But, she was no were to be found. Then I began hearing this tick-tick, tick-tick, tick-tick sound. I followed it into the bathroom to find Peyroux in the bathtub licking the faucet! Now I catch her hanging out in there all the time. Just the other day I drew myself a bubble bath and turned around to see Peyroux standing in the middle of it! I’m not sure why she’s so obsessed with the bathtub all of a sudden. I can only guess that she thinks it’s a magical watering hole and a sanctuary away from Bella.

Week 3a

I got this recipe from George, a friend / co-worker. He made it for a lunch meeting at LINES Dance Center before I moved to IL. When I tasted it, I fell in love and begged him for the recipe. So far this is my second second attempt at Eggplant Moussaka. It still didn’t taste as good as George’s but improved drastically from the first time I made it.

So the key is to follow the recipe to a “T.” I was excited that my cream sauce actually thickened this time. I think it’s because I used a whisk instead of a spoon to stir… or maybe I just measured wrong the first time. The other thing I just can’t get right is the consistency of the dish after it’s cooked. Mine keeps coming out to soupy! Perhaps it has something to do with the altitude or the cooking time. Anyways, I guess I’ll just have to try it again!

Week 3

Last weekend I traveled to Salt Lake City, Utah. On my trip home I grabbed a Rachel Ray magazine to read while I waited to board the plane. This weeks recipes were inspired by a few found in that magazine. Since I took artistic liberty, I’ll try to write out the recipes in as much detail as possible. Hope you like what you see!
First up
Meatball Minestrone Soup:
ingredients
1/2 onion (I used a yellow onion)
2 cloves garlic
A dash of thyme
2 zucchini (one green / one yellow)
1 cup tomatoes
2 cup chicken or vegetable broth
2 cans of cannellini beans
1 1/2 cup spinach
Meatballs! (I wanted to make this meal fast, so I bought them pre-cooked at the store)
salt and peper to tast and top with parmesan cheese
directions
– Saute onions and garlic(cook about 2-4 min) then add yellow and green zucchini (cook about 2 min)
– Add the remaining ingredients and bring mixture to a simmer
Sprinklewith cheese and serve!
On the side
Quinoa Salad
ingredients
1 cup quinoa
1 cup olives
2-3 table spoons olive oil
1 lbs brussel sprouts
1 cup water-chestnuts
A dash of lemon
Salt and pepper to taste
 
Directions

– Cook quinoa as packaging directs

– In a skillet saute water-chestnuts in olive oil
– Add olives (2-4 min) then brussels sprouts (2-4 min)
– Splash lemon juice and salt & pepper (5 min)
– Mix saute mix with quinoa and serve!
I also served rolls too, but the were also store bought and pre-made
I know… I cheated this week, but I was creative. I think I should get some points for that. Anyways to make up for it, I did try a second attempt of a recipe I had failed at before. So check back to see how it turned out!

Meeting Baby Grace

Last weekend I was lucky enough to visit my Salt Lake City family and friends. I was especially excited to meet my new niece, Baby Grace, and see her blessing. Check out the pictures below from my trip.

Date With Dan

A few weeks ago Dan treated me to a very sweet day date. Since we had such a hard time finding a restaurant the night before, we decided lunch would offer less complications. We decided on The White Chocolate Grill and ordered filets. Dan picked the BlueCheese Crusted Filet and I the Parmesan Crusted Filet. Personally, I think mine tasted the best but, we both decided we could make them at home for half the price.

Following lunch we ventured around town in the Mini and found a Naperville nook. Basically it was a short drive through a forest area… seriously not even a mile long, but it was cute. Then we headed into downtown Naperville to the “Marbles”, a brain game store. There we picked up a few games that would keep us thinking and headed next door to “Le Chocolate”. Once there we ordered some delicious exotic chocolate drinks and played our new games. My Dan sure knows how to treat me!

Week 2

Wednesday the 14th was my second attempt at fulfilling my cooking goal. I’m a little late at posting my results because I’m playing catch-up from my trip to Utah. Last week I made Turkey Meatloaf, Oven Roasted Green Beans and Carrots with Shallots, Sage, and Thyme. Check out my finished product!
 


Again, I made a few tiny changes to better suit my taste. Instead of mushrooms in the meatloaf I choose corn. It add a great flavor that I will use again. Also instead of butter in the carrots I used olive oil. What a great substitute! You couldn’t even tell the difference.
 
The meal was satisfying and of course, Dan gave it his full approval. However, there are two things that I would do differently next time. One, brown the green beans a little more and two, use fresh sage in the carrot recipe.

Chicago Cultural Center

On the 10th, Dan and I spent a lovely afternoon in Oak Park with some friends. We went to this tasty restaurant for brunch called “Wishbone” – Southern Reconstruction Cooking. Let me tell you, that place had some character. From the slanted shelves to the egg / chicken inspired art, there was an eyeful to take in.

After brunch we wondered into Chicago along with our friend Megan. There Dan enjoyed his book on tape while us girl went to Macy’s, Old Navy, and the Joffrey Ballet. Unfortunately the Joffrey Ballet was locked down for an audition… I really wanted to check out the studio. So, we decided to meet back up with Dan to check out the Chicago Cultural Center. Below are are some pictures from our short jaunt around the building. The ceilings were stunning!



With the day growing into night, Dan and I took Megan home and since we were still in the city, we thought we should grab dinner. Little did we know how long it would take us to park and then to find out the wait was 90 minuets… and we’d have to wait outside in the cold! Boo! So we headed home and tried three more restaurant on the way. But we ran into the same story everywhere we went. Lesson learned, you have to make reservations in this city. We ended up eating at home and kicking our feet up in front of the fire. All in all, it was a perfect ending to full day of fun and adventure.

Week 1

Wednesday was my first attempt at a new recipe as part of my new years resolution. This week I made Balsamic Chicken with Feta, Hashed Sprouts with Hazelnuts and Fried Capers, and Crisp Rosemary Potatoes. I made each of the recipes almost to perfection with the exception to a few minor changes. One of the challenges I’ve been facing with the Naperville grocery stores, is that I can’t alway get the ingredients I need. So instead of hazelnuts, I used almonds and since there was no rosemary in sight, I used Italian spices.


I was extremely excited that everything tasted delicious. Especially since I also had a few timing issues. The chicken ended up taking a bit longer than anticipated and I should have started the potatoes before the brussels sprouts. At least I know now! As I finished cooking the meal, I snapped a photo. I only wish I had documented the steps between but, I haven’t mastered that coordination.

Anyways, Dan was super excited when I presented him with this meal. I believe he even said something in the lines of… marrying you is starting to pay off. Ha! I know he’s kidding but I’m pretty excited to have found my inner chef (that might be too bold of a statement at this point).
As we tasted the different components of the meal I asked Dan how he would rate them. Basically I want to know if I should keep the recipes or trash them. I was quite surprised when I started to get compared to a restaurant! Laughing, I told him that by no means was I ready to be compared to a restaurant, he would have to compare it to the meals I have already made. With that said, I received high marks especially on the brussels sprout recipe.
All in all, I will make the meal again however, I’ll probably try a few other chicken recipes first. Now I’m off to search for my next meal. If you thought the recipes I made sounded interesting, click on the names below to see the full recipe.
 

New Year’s Eve

This year Dan and I went to a comedy show for New Year’s Eve. The show was an improv that followed the same rules at the t.v. show “Who’s Line is it Anyway?” The comedians asked the audience for words to make their stories and challenges more entertaining. At midnight the entire room counted down and toasted to 2010. One lucky couple even got engaged!

Following the show Dan and I went home to celebrate with the dogs. We both brought our New Year’s headdresses home so Bella and Peyroux wouldn’t miss out.
Judging from the pictures, they weren’t as enthusiastic as I was about the hat and crown.
Peyroux, on the other hand, was quite excited to toast her way into the New Year by taking a few licks at Dan’s drink.
And of course Bella didn’t want to be left out either.

Panda Love

Peyroux (aka Panda) is our very loving Boston Terrier. In fact she doesn’t just love Dan and myself, she loves just about anyone who has food. If you’ve met Peyroux then you know she also loves to give kisses. Check out the pictures I caught of Peyroux making out with my date!
