Alright, this dinner was one of my favorite so far. I could eat it every week, no lie. This weeks dishes were Quinoa and Feta Stuffed Peppers and Andouille Succotash. Once again http://www.epicurious.com has delivered fabulous recipes. Of course you know me, I pulled a few ingredient switches though. The stuffed pepper recipe called for couscous but I didn’t have any, so I used quinoa instead. It turned out to be a perfect switcheroo.
