This week was all about using what I had to make a meal. I’ve been so exited about trying new things that I went over this months food budget a lot! So I made up my own Greek inspired platter. We had falafel, hummus, spicy yogurt, cucumbers, roasted green beans, tomatoes, sautéed onion and spinach salad, and olives. It was a light delicious meal that Dan, of course, wanted me to make again the next day. I guess I don’t have to be fancy all the time.
