Dan was having another salmon craving, so this week I began my search for something intriguing. Here’s what I found: Feta-Spinach Salmon Roast, Garlic Roasted Green Beans with Shallots and Hazelnuts, and cous cous. I cooked the salmon almost as directed. Instead of layering it I decided to lay it flat. Fortunately it still cooked perfectly. I thought the salmon tasted great, almost too great… must be all that cream cheese; yum! The green beans also turned out just as expected. It was the first time I cooked with hazelnut. I wasn’t sure how it would taste, but this recipe is a keeper! As for the cous cous, that was from a box. Sometimes a girl needs a break and it was a flawless match for the meal 😉 Enjoy!
