Week 30

This meal was SO good and totally worth the time it took to cook. Here’s the spread: Artichoke and Sun-Dried Tomato Stuffed Chicken Breast, Cauliflower Gratin, and my easy mash potatoes. In my opinion, this meal is the best I’ve made, however, I had some difficulty with the chicken execution. To prepare for the meal I bought my very first meat tenderizer, but apparently I didn’t get the chicken flat enough. I had a heck of a time trying to keep the chicken together with the tooth picks during the cooking process. I did the best I could and used about 5 to keep the darn thing together… it was very frustration! Other than that, everything was easy and turned out fabulously. This meal is highly recommended, unless your on a diet! Enjoy!
